OUR CHEFS

Stephen Lever

Born in Manchester; Head Chef - Stephen Lever has spent most of his
working life at hotels in various parts of England. For several years he
was Senior Sous Chef at The Old Vicarage near Grange-over-Sands in
Cumbria and then at The Moorside Hotel in higher Disley on the edge
of the Peak District (both awarded 2AA Rosettes). He moved south in
1999 to become Head Chef at The Roysdean Manor Hotel in
Bournemouth and then when the hotel was sold for re-development,
he moved to be Senior Sous Chef at Elmers Court in Lymington.
When the opportunity arose, he then became Head Chef at
Piccolo Mondo where he happily resides today.

Stephen is influenced by the likes of Rick Stein for fish dishes,
Giorgio Locatelli and Nico Ladenis for rustic Italian cooking and
Roy Ackerman as an all-rounder in the restaurant business.
His mentors include Stan Reeves and James Brown, owner and Head
Chef at The Old Vicarage, both of whom were Master Chefs of
Great Britain. Stephen has appeared on Channel Four when he had the
opportunity to meet Roy Ackerman in person.
